A 38 cm Petromax solid steel griddle-bowl. It works as a disc griddle: a steel surface heated over coals that spreads heat from centre to edge, ideal for vegetables, meats and Argentine-style plancha cooking on the kamado or open fire.

The steel griddle is open fire's answer to a teppanyaki plate: a concave surface that concentrates heat in the centre and grades it toward the edge, so you can sear in the hot zone and hold at the rim. Petromax's FS38 is solid steel that develops a natural patina and takes flames head-on. On the kamado grate or a field fire, it gives a huge plancha surface for vegetables, meats and the disc-cooking that's so versatile.

Editor's verdict

A disc-style steel griddle for open fire and kamado. Graded heat from centre to edge, natural patina and Petromax's serious build.

7.5/10

Pros

  • Solid steel that takes flames head-on
  • Graded heat: hot zone in the centre, warm at the edge
  • Wide surface for vegetables, meats and disc-cooking
  • Natural non-stick patina — Petromax build quality

Cons

  • Leaves no grill marks — it's a flat plancha surface
  • Carbon steel: needs seasoning and drying to avoid rust
  • Heavy and large-diameter — check it fits your kamado

Who it's for

For anyone wanting a large steel disc griddle for vegetables, meats and plancha-style cooking on the kamado or a field fire.

Not for

If you need grill marks or precise low-temp cooking, a steel griddle isn't for you. And like all carbon steel, it must be seasoned and dried.

FAQ

  • What exactly is the Petromax Griddle/Firebowl FS38?

It is a 38 cm solid-steel piece that works as a griddle on top and as a fire bowl underneath, depending on how you set it. The large flat surface is ideal for smash burgers, fajitas or big group breakfasts. Its thick steel holds plenty of heat and spreads it with no cold spots.

  • How do I season the FS38 steel before use?

Like all carbon steel, you should season it before first use: heat it, apply a thin coat of vegetable oil and repeat several times until it builds a dark patina. Unlike Lodge cast iron, which comes pre-seasoned, here you season from scratch. Well seasoned, it becomes nearly non-stick.

  • Can I handle it with any glove?

No: the 38 cm solid steel reaches very high temperatures and is heavy, so you need a long-cuff heat-resistant glove like the Rapicca to move it safely. Long tongs help with the food without bringing your hands close. Never grab it with a thin cloth.
