Which side of the Lodge griddle do I use for what?
It is reversible: the smooth side (griddle) is for eggs, bacon, pancakes or thin vegetables, and the ribbed side (grill) leaves sear marks and drains fat from meat and chops. It measures 42×24 cm, so it covers a good part of a large kamado grate. Just flip it depending on what you cook.
Does it come pre-seasoned or do I have to season it?
Lodge ships it pre-seasoned with vegetable oil, ready to use straight out of the box. Even so, it helps to build that layer with use and wipe on a thin coat of oil after each wash so the natural non-stick keeps improving. The more you use it, the better it behaves.
Can I wash it with soap or will it ruin the seasoning?
A little mild soap occasionally will not destroy a well-built seasoning, but the ideal routine is hot water, a brush and immediate drying over heat so it does not rust. Never the dishwasher and never left to soak. After drying, a drop of oil and it is ready to store; with a Rapicca-type glove you handle it hot safely.
