The cheap instant-read that does the one job that matters when you lift the dome: knowing the core temperature before the kamado bleeds heat. The sheet quotes 3 seconds, ±1 °C and a folding 12 cm probe.

On a ceramic kamado an instant-read thermometer does not compete with a chamber probe: it completes it. The closed dome is half the machine, and every time you lift it you lose heat and upset a draught you have spent hours choking down with the vents.   • Can I leave it inside the kamado during a long smoke?

    No. It is an instant-read: the body is not meant to live inside the chamber and the maker warns against direct heat. For twelve hours at 105-135 °C you want a chamber probe whose cable exits through the gasket, such as the dual-probe Cirycase. This one comes in at the end, for the stab that confirms the core.

  • What internal temperature should I pull the meat at?

    The references we use in the site's recipes: whole chicken, 74 °C in the breast and a little more in the thigh, as in the spatchcock chicken on the kamado; pork or beef cooked pink, 52-57 °C to taste; and collagen-heavy cuts, such as low-and-slow smoked brisket or pulled pork, between 93 and 96 °C, when the probe slides in without resistance.

  • Can it measure the dome or the pizza stone?

    No, and it is worth being clear about it. The published range tops out at 300 °C, and a pizza session in a kamado runs at 350-400 °C: off the scale. It is also a contact probe, so it does not read surfaces. To know whether the stone is ready you need an infrared gun like Ooni's; chamber temperature comes from the lid thermometer.

  • How do I check it reads true, and how do I clean it?

    With a glass of stirred ice water: the probe should read 0 °C, and about 100 °C in boiling water at sea level. If it drifts by more than a degree, you know what to correct for mentally. To clean it, only the probe under the tap plus a cloth: the maker forbids submerging the body, which carries no declared IP rating.
