When should you use the ConvEGGtor and when not?
Use it whenever you cook indirect: smokes (brisket, ribs, pork shoulder), bread, pizza, long roasts. Remove it for direct heat: steaks, burgers, fast-grilled veg. Rule of thumb: if the cook is more than 30 minutes or needs gentle heat (<180°C), ConvEGGtor in. If it is a 6-8 minute sear, out.
How do you clean the grease that builds up on top?
You do not clean it: you burn it. After cooking, run the kamado at 250-260°C for 15 minutes lid closed. Grease turns to ash you brush off cold. Never pour water on a hot ConvEGGtor — thermal shock, risk of cracking.
How long before it cracks?
Well treated, 8-10 years or more. Hairline cracks after 2-3 years are normal and do not affect use. Only replace if it splits in two. The fast killers are dropping it or wetting it hot. BGE warranty: 1 year factory, but most dealers swap it under normal use.
Does it fit non-BGE kamados?
No, it is sized to the millimetre for the BGE Large. With a Kamado Joe, buy the Kamado Joe plate setter (they call it the "heat deflector"). The dimensions differ. Generic universal deflectors exist but tend to have short legs, so the grate ends up lower than ideal.
