IBILI

IBILI is a Biscay housewares and baking brand, one of those that sit in half of Spain's kitchen drawers: a broad, unpretentious catalogue of tins, rings, nozzles and pastry tools made to be used daily rather than displayed.

What makes it interesting for a kamado is a material choice that is increasingly rare in home baking: a good part of its tin range still exists in bare stainless steel, with no non-stick. A coating is convenient and has a ceiling; stainless is not convenient — you always have to grease or line it — but it has nothing to degrade when the chamber spikes past 220 °C, which is exactly what happens inside a ceramic. For a cake that lives off being scorched, that is not a detail: it is the requirement.
