FAQ
What's special about the Global G-2 chef's knife?
The G-2 is Global's iconic chef: a very hard Japanese Cromova 18 stainless blade with a fine, sharp edge, and the signature sand-filled hollow steel handle to balance weight, all one seamless piece with no crevices for grime. It cuts with a precision softer European steel can't match, in exchange for demanding more care. It's for someone who enjoys cutting.
What is the MinoSharp sharpener in the set for?
The MinoSharp is a water-fed ceramic-wheel sharpener, designed by Global specifically for the edge angle of its Japanese knives: that's why it ships in the set, because a European steel isn't ideal for Cromova 18. You draw the blade through its wheels with a little water and restore the edge without risking a chip. It solves maintenance without learning to sharpen on a stone.
Can I put it in the dishwasher or use a regular steel?
No dishwasher: the hard Japanese steel is more brittle and aggressive washing chips the fine edge. Hand-wash and dry, always. To maintain it use the set's MinoSharp, not an aggressive European steel like the Arcos, which is meant for softer steels like Wüsthof or Zwilling. Treated with respect, the G-2 cuts like new for years.
