Origin and background

Global is a Japanese brand born in Niigata in 1985, conceived by designer Komin Yamada and manufactured by Yoshikin. It broke with traditional Japanese cutlery aesthetics to create a language of its own, all polished steel, and by now it is an instantly recognisable icon in professional kitchens the world over.

What sets it apart

Its signature trait is the one-piece CROMOVA 18 stainless steel build: blade and handle are a single seamless unit with no rivets or joints where grime can collect, which pays off when you are working outdoors beside the kamado. The hollow handle is sand-filled to shift the balance toward the hand, and the dimpled finish improves grip even with greasy fingers. The edge is ground at a tighter angle than the German school: it is built for precision slicing, not for hacking through bone.

Our take

At mikamado we list the G-2 (20 cm chef's knife) with the MinoSharp sharpener because it settles a grill cook's dilemma in one move: a versatile blade for fine filleting and breaking down cuts, plus the tool to keep it in shape. Based on the specs, the user community and our own experience cooking on our Big Green Egg Large, this is a knife that rewards anyone who values a light touch and hand balance. An honest caveat: CROMOVA 18 does not hold its edge as long as harder Japanese steels such as VG-MAX, and the metal handle feels cold and very smooth for those who prefer wood. It goes toe to toe with Kai's Shun range and with Miyabi.
