  • Why roast the chicken upright on a throne?

    Roasting the chicken upright (beer-can style) lets fat drain and hot air circulate over all the skin, so it stays crisp outside and juicy inside. The Weber Style throne stabilizes the bird so it does not topple inside the kamado. Many holders include a reservoir for beer, stock or wine that flavours from within.

  • Does an upright chicken fit with the kamado lid shut?

    On a Classic/Large kamado usually yes, but measure the interior height with the grate in the raised position first, because a large chicken on the throne adds quite a bit of height. On small kamados like the Joe Jr it may not close. If the lid grazes, lower the grate or use a smaller bird.

  • How do I know when the chicken is done?
