Does it fit a Big Green Egg Large or a Kamado Joe Classic?
It fits, but only just. The sheet gives 46 × 28 cm and those grates are around 46 cm across, so the basket spans the whole ring and the four corners end up unsupported. The food still sits over the centre and the dome closes without forcing, since the basket is about 5.8 cm tall. On a MiniMax or a Joe Jr it does not fit.
Is it any use for low-temperature smoking?
Not much. At 105-135 °C with a deflector you never turn the fish: it stays put and comes off on a spatula. The basket earns its keep exactly where flipping happens, that is, direct heat from 200 to 250 °C, or when you want twelve sardines out of the kamado at once without losing any through the bars.
Will the fish still stick inside the basket?
If you do nothing, yes: it is bare stainless steel with no non-stick. The routine that works is to preheat it on the grate for a couple of minutes, brush it with oil and oil the fish skin too, which should be dry and salted on the outside. Do that and a portion sea bream releases on its own when you open the halves.
How do you clean it, and how does it cope with coastal salt air?
Weber lists it as dishwasher safe, which is half the argument in its favour. By hand, soak it in hot water and use a fibre brush, never steel wool over the welds. And do not store it inside the kamado: damp ash plus sea air will pit any stainless steel in time.
