We have not used it: the manufacturer's sheet gives food-grade 430 stainless steel, a 32 × 22 cm cooking area and 460 g, with a brush and a bag in the box. The locking clamp is what justifies it — it holds the fish so you flip it in one piece and keeps prawns out of the coals. On a kamado it belongs over direct heat; in low and slow it has no job.

A locking fish basket, so a whole sea bream turns over without leaving its skin on the grate. Built for kettle grills, yet on a kamado it solves the same problem and cuts your lid-open time.

On a kamado a whole fish has two enemies: the grate, which keeps the skin, and the dome, which dumps heat and gulps oxygen every time you lift it. A fish basket deals with both. The penobon is the simplest form of the idea: two grids of 430 stainless steel that close over the fish and lock, with a handle to turn the lot in one movement.

The published figures are 32 × 22 cm of cooking area and 460 g, feeding two to three according to the maker. On a 46 cm grate there is room to spare; on the 35 cm cast-iron grid of a Large it covers nearly all the usable surface, which for a butterflied sea bream or four sardines is exactly what you want. The mesh is tight enough that prawns and green asparagus never reach the coals.

It was not designed for a kamado: this is generic barbecue kit, and it shows in a spec sheet that pairs those 32 × 22 cm with a 22 × 30 × 2 cm in the dimensions table. Nor is it 18/10 steel: 430 carries no nickel, and on the Costa Blanca it wants drying after the wash — by hand, says the maker — and storing indoors. Today it is the top seller in its barbecue cookware category on Amazon.es, which says more about how little it costs than about its steel.

  • Will this fish basket fit a kamado?

    On paper, yes: the 32 × 22 cm cooking area fits comfortably on a Large or Classic grate, and on a 35 cm cast-iron grid it covers nearly all the usable zone. What the sheet never publishes is the handle length, so on a Joe Jr or a MiniMax measure first before you close the dome on it.

  • What temperature should I grill fish at with it?

    It is a direct-heat tool, no deflector. For whole sea bream or sea bass, 200-250 °C with the dome closed and a few minutes a side. Sardines and big prawns want it hotter, nearer 280 °C, and are done in minutes. At 110-135 °C low and slow it adds nothing, because there you never flip the fish.

  • Does the fish stick to the basket?

    It sticks if you put it on cold. The routine that works is the usual one: basket over the coals until it is properly hot, an oiled paper towel over the wires, and the fish patted dry on the outside before you clamp it. Some skin still stays behind, which is why the included brush and a hot soak straight after help so much.

  • Does it survive coastal salt air?

    430 is stainless, but ferritic and nickel-free: it handles sea air less well than 18/10. The maker calls it rust-resistant and asks for hand washing. Here in Torrevieja what makes the difference is drying it while still warm and not leaving it out on the terrace; bagged and kept indoors, it lasts seasons.
