  • How many smoke hours do the chips give depending on bag size?

    Mesquite smokes hard per gram, so you use it sparingly: 3-4 pieces per hour is enough. The 1L bag (~400g) covers 4-5 sessions; the 5L lasts a home cook a full season; the 10L is for pros doing professional smoking. Start with the small bag if you are new — mesquite is easy to overdo.

  • What does mesquite smoke taste like?

    Earthy, intense, slightly peppery — the canonical "Texas BBQ" taste. The most aggressive smoke in the catalog, completely different from cherry or apple. Works on very fatty cuts (Wagyu brisket, picanha, beef ribs, tongue) where subtle smoke gets lost. What it does NOT tolerate: fish, cheese, pale-meat poultry — it pulverises them into bitterness.

  • Does it suit all kamados or only XL?

    Universal in size — chips are small (2-3cm) and fit any kamado. The catch is usage: in small kamados (BGE Mini, Junior), mesquite is tricky because the small chamber concentrates intense smoke and pushes it bitter. From BGE Large or Kamado Joe Classic upward, there is enough volume for the smoke to settle.

  • Can I blend mesquite with a milder wood?

    Yes, in fact we recommend it for beginners. The canonical blend is 30% mesquite + 70% cherry or pecan — you keep the earthy mesquite body without it dominating. For more authentic Texas-style brisket, 50/50 mesquite + pecan. What we do NOT advise: 100% mesquite for >6h cooks, it goes bitter on smaller cuts.
