Origin and heritage
Yaxell is a Japanese kitchen-knife maker founded in 1932 in Seki, Gifu prefecture. Seki is one of the historic capitals of Japanese cutlery, with centuries of forging steel and swords behind it; that lineage is what the brand carries into the kitchen today.
What sets it apart
The maker works with blades built around a VG-10 steel core clad in multi-layer Damascus, pairing hand-craft with modern production. Its Ran series is the most recognisable example: the Yaxell Ran Nakiri 17 cm carries 69 layers of Damascus over that hard core. A nakiri is a straight, rectangular blade made for vegetables, cutting cleanly straight down with no rocking, ideal for onion, herbs and root veg.
Our assessment
We added it to the catalogue because it brings what German cutlery can't: a high-hardness Japanese edge. Based on the VG-10 specification and on our experience cooking on our Big Green Egg Large, the edge bites finer and holds longer than a standard European steel. The honest flip side: a harder steel is also more brittle, doesn't get along with bone or frozen food, and asks for more careful sharpening, ideally on a water stone. The 69-layer Damascus is largely cosmetic; the VG-10 core is what does the work.
Who it's for
For the cook who has butchery sorted and wants a precision blade for all the vegetable mise en place around the kamado. If you look after the edge and respect what each blade is for, the Ran Nakiri is a joy to use. If you want a single knife that survives everything, bone included, a German chef's knife will serve you better.
