Baldassare Agnelli

Baldassare Agnelli has been making professional kitchen tools in Bergamo since 1907, and it is one of those Italian houses whose catalogue reads more like a bakery inventory than a housewares shop window: copper, aluminium and aluminised steel, in the sizes pizzerias and bakeries actually use rather than the ones that look tidy in a cupboard.

Its aluminised sheet is the material that brings it onto this site. It is steel coated in aluminium with no non-stick on top: it conducts fast, browns the edges and has no organic layer to degrade when the kamado overshoots. In return it darkens with use and never looks new again. Agnelli publishes no maximum temperature for these trays, and that deserves to be said with the same honesty: what holds up here is the material, not a catalogue figure.
