Does the included steel work on my other knives?
Yes: a steel realigns the edge of any European steel knife, so you can use it on the Wüsthof chef, the boner or the Victorinox santoku. Remember a steel doesn't sharpen, it only realigns: when a knife won't cut even fresh off the steel, it needs a stone or sharpener.
